Super fun, super easy chilled Piña Colada Soup

Welcome back to “comfort cooking with Sheri”. Today, we’re blending up a very simple cruise recipe from Princess Cruises. It’s called “Frozen Rum-Infused Piña Colada Soup”. What’s funny about this is it’s not frozen at all, just chilled. But, we didn’t want to change the name!

This one happens to be Mr. CruiseTipsTV’s FAVORITE type of cruise appetizer! Chilled, fruit soups are a staple for him on cruises, so we’re looking forward to recreating this one! We’re going to omit the rum in this recipe, since Junior will be loving it.

We’re also “halving” the recipe, as the original recipe we found online served 10 – wowza!.  Grab these ingredients and enjoy some cruise-cookin’ with us!

*UPDATE: we had a lot of extra soup, so we turned it into ice cream! How? Well, we used our Kitchenaid stand mixer Ice Cream bowl. Here’s how it works- you freeze the bowl overnight, then attach it to your sand mixer, and pour in the ice cream mixer! VOILA! Piña colada ice cream!

Princess Cruises Frozen Rum-Infused Piña Colada Soup

Piña colada soup recipe (5 Servings)

Ingredients:

  • 1 1/3 lbs (or 2 1/2 cups) pineapple (keep some dice for garnish)
  • 1/2 cup sugar, granulated
  • 6 tablespoons lime juice
  • 1 1/3  cup coconut milk
  • 3 oz coconut flakes
  • 1 tablespoon rum (optional)
  • 1 1/2 cups plain yogurt
  • 2 1/2 cups sour cream
  • 5 pieces pineapple, for garnish  

To Prepare

In a food processor blend pineapple, sugar, limes juice, coconut milk and coconut flakes. Blend the soup well to break down the coconut flakes, or they will remain somewhat “chewy”.

•Combine pineapple mixture, plain yogurt, sour cream and rum in a bowl, stirring well. Cover and chill at least for 3 hours.

•Pour into glasses and serve immediately. Serve with pineapple garnish and drink with a straw or spoon!
