Mediterranean Chopped Salad in the CruiseTipsTV Test Kitchen
We are finally back with a new episode of the CruiseTipsTV Test kitchen (aka Comfort Cooking with Sheri). Today it’s healthy-ish stuff with an awesome Mediterranean Chopped Salad. This is Part one of THREE cooking videos coming to our YouTube Channel!. We decided to try pre-recording this episode of the CruiseTipsTV Test Kitchen rather than doing a live show. The livestreams tend to be quite a bit longer and we think some people might prefer short and simple recipes.

I mean, I really, really love them. I have a salad with just about every dinner. They’re just so yummy! In this episode of the Cruise Tips TV kitchen, I’ve got a delicious salad to share with you. And the good news is it’s super easy to make. If you like salads, you’re going to love this Mediterranean chopped salad.
Seriously, this thing whips up in just minutes, and it’s so good, and so easy to personalize. Follow along with us as we blend two things we love- cruising, and food! The recipe for the Mediterranean Chopped salad is at the bottom of this article.
Lots of options!
We’ve seen tons of variations on this salad, so feel free to get creative with it. If you’re more of a eat-with-your-hands kind of person, you might want to try stuffing all this Mediterranean chopped salad goodness into a pita. When it’s hot in the house, and I just don’t feel like cooking, this is a tasty way to keep the boys satisfied with a healthy option.

A great way to make this a complete meal is to sneak a little protein into the mix (like we did with the salami in this recipe). If you want fast and easy, but don’t care for salami, pop a can of tuna into the mix. Just break up the tuna with a fork, and bam – you’re done. Now if you really want to get fancy with it, you can broil up some salmon. The boys just love salmon, and it’s one of my favorite salad toppers too.
When I’m looking to add protein but keep calories down, salmon is on top of my list. Salmon offers a relatively low-cal protein option, and packs tons of other health benefits. It is chock full of vitamin goodness like omega-3 fatty acids, B-vitamins, and potassium. Let’s just say it’s hard to go wrong with salmon. We’ve also seen this recipes done with a bit of mint sprinkled in. Sounds yummy!

Mediterranean Chopped Salad Recipe
For the salad:
- 2 heads chopped romaine (we used a bagged spinach mix)
- 1 cup grape or cherry tomatoes, sliced in half
- 1 can chickpeas (garbanzo beans), drained and rinsed
- 1/4 cup finely chopped red onion
- 1/2 cup sliced olives (black or kalamata)
- 1/4 cup feta cheese, crumbed (mozzarella is a great sub!)
- 2 T chopped fresh parsley
- 6 oz chopped salami (optional)
- Chopped parsley to taste
For the dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 T white sugar (or sub honey)
- 1 T dijon mustard
- 1 T mayonnaise (optional)
- 1 clove garlic (minced or grated)
- Salt & Pepper to taste
- 2 T chopped fresh parsley
- 1/4 T oregano
Directions: Shake all ingredients in a jar and refrigerate. For the salad, assemble ingredients as shown in the video, toss with dressing, and serve!
